Alpha Tolman Cheese
This gives a whole new meaning to Swiss cheese. Crafted from raw cow’s milk, the cheese has a buttery fruit and nut flavor when young. But after being aged for 8 to 12 months in a temperature-controlled cellar, it develops bold, meaty, caramelized onion notes, with a dense and pliant texture.
A terrific melter, Alpha Tolman is wonderful when incorporated into creamy pots of fondue, with smoked sausages, steamed potatoes, and pickled radishes for dipping, and a robust ale or plummy red wine for sipping alongside.
Inspired by Alpine varieties such as Appenzeller, Alpha Tolman is a proprietary cheese created by Jasper Hill Farm, a working dairy and creamery in the Northeast Kingdom region of Vermont.
