While doing research for Nutkrack, Chef Eric ate his way through as many candied pecans as he could find over the inter-webs. While many were very tasty, what he often found missing was the true, complex flavor of the pecan. He found that candied pecans on the whole were overly sweet and under roasted, and set out to fix that. Nutkrack desires to honor the perfection of the humble pecan.
