Chorizo Leon is a horseshoe-shaped, herradura, ready-to-eat sausage, secured with a string from hanging on poles when curing. Its distinctive flavor comes from using all four types of Spanish pimenton: mild, smoked, hot and bittersweet. This cured sausage has a bold smoky flavor, dark red color, rich aroma and excellent texture. This is the typical flavor of chorizo made in the northwest of Spain in León.
