Made from raw sheep's milk, the cheese is carefully aged, under strict conditions, for a minimum period of ten months. The wheels are then aged another two months while they bathe in Cognac. When this process is finished, El Piconero is covered in a layer of butter with aromatic herbs.

In September of 2001, in the heart of La Mancha in Spain, the very first batches of this new cheese were produced.
