Fior d'Arancio is an outstanding blue cheese made by Sergio Moro of Moro Latteria di Moro Sergio in Oderzo in the province of Treviso, Veneto in northern Italy. His whole milk comes from the local cooperative dairy that his family has been a member of for over 50 years. The milk is made up of native Friesian, Brown Alpine and Red Cows. Moro's cheeses are made by cheese makers at the dairy under his specifications, Moro then takes it from there. In this case, wheels are pierced, place in barrels and bathed in Fior d’Arancio DOCG (a sweet wine produced with Moscato grapes grown in volcanic soil in Colli Euganei in the province of Padua, Veneto) for about 30 days. Finished on wooden planks, Fior d'Arancio is finally topped with orange peel. Literally meaning "orange blossoms," this ubriaco, "drunken," cheese is sweet and salty, with complex aromas of honey, peach, orange blossom and wildflowers. A truly unique blue that will stand out on your cheese plate. The harmonious flavor of this blue makes it an exceptional dessert cheese. You could use this in recipes as it has a nice creamy/crumbly texture, but this is really too special to not eat on its own!
