Serrano, "Ham of the Mountains," is a food that truly defines traditional Spanish cuisine. Don Juan Serrano is based in Village of Calamocha in the province of Teruel, Spain. Using traditional Spanish techniques, only the highest quality white hogs are selected. They salt the legs for 2 weeks then air dry the meat for a minimum of 13 months. Don Juan Serrano is slightly less fatty and carries more moisture content then its Italian counter part Prosciutto giving it a firmer texture and deeper flavor. It is an essential ingredient for any tapas. Serrano is especially delightful when served with Manchego cheese and olives.
