At the World Cheese Awards in 2012, Tuxford & Tebbutt Blue Stilton was crowned as the Supreme Champion of the event, taking home a total of five awards.
To be called "The King of Cheeses" a Stilton must be made only in three counties from local milk which is pasteurized before use, be made only in the traditional cylindrical shape, be allowed to form its own crust or coat, be unpressed, have delicate blue veins radiating from the center and have a taste profile typical of Stilton. The cheeses are still matured individually and are turned and graded by hand as has been the case for many generations. Whilst the manufacture is traditional, a huge amount of monitoring and measuring is carried out to ensure that this cheeses meet the highest quality standards.
